I use this soy flour to make soy cookies regularly. It is perfect for baking, and I don't even add any other kind of flour. When the 50 lbs. arrives, I divide it into plastic storage containers and store in my extra freezer -- works great! The quantity is really too much for what I need, but I will be sharing it with friends. It does not have a bad taste, and the texture of the baked goods is really nice---something that's hard to achieve in gluten-free foods.
